Susan Gibson was driving east from California on Tuesday, trailer in tow. Her destination? Louisville.
After visiting the city about a year and a half a go with her partner, Gibson, 40, uprooted her life in California (and her 10-month-old baby), to bring her smoothie restaurant to Louisville.
"We saw that there was good potential in the area," Gibson said. "There were all these [health and fitness] studios popping up, like Orange Theory."
