It was a good problem to have: A few months into the buildout of Mighty Squirrel's Waltham brewery in March, its popularity was climbing faster than expected.
The brewery, which sold less than 1,000 barrels of beer in 2017, had planned a facility with capacity to brew 7,000 barrels annually. But as work began on the 18,000-square-foot space, sales for their product — then brewed at Peabody Heights Brewery in Baltimore — outgrew those expectations.
