Cargill expanding Minnesota egg processing operation


Cargill continues to invest heavily in its North American protein operations.

The company announced Wednesday a $20 million project to increase capabilities and capacity at its egg processing plant in Big Lake, Minn.

With this comes an expected employment increase of around a dozen positions.

Construction will start in May and should be completed in January.

The Big Lake expansion is part of nearly $900 million Cargill has invested over the past two years to expand its protein business.
