Jackson's Bar & Bistro, a shuttered Hillsboro Village mainstay whose demolition was approved last month, may soon be replaced by a project nearly twice its size.
Metro filings show plans for a 4,880-square-foot restaurant space at 1800 21st Ave. S., compared to the 2,650-square-foot Jackson's building. The new plans indicate room for 257 seats, according to a water and sewer request, up from 135 in the prior iteration.
