That's the idea behind Minnesota Nice Cream, which recently opened at 807 Broadway St. N.E. in Minneapolis. Owner Katie Romanski launched the business in March 2016 as a food truck, landing everywhere from popular music festivals like Rock the Garden and Eaux Claires Music Festival, to breweries and block parties.
