Can we consider Jimmy Sinh, aka Sushi Jimmi, the protagonist of Memphis' version of "Where's Waldo?" Sinh is here, there, gone again, and then he once more pops up.
Sinh's latest project is Poke Paradise, a pop-up located at 5310 Crestview Road, between Covington Pike and Sycamore View Road, north of Summer Avenue.
Sinh has been running the pop-up for about a year in order to finance a new food truck.
"We're finishing up on the food truck right now. It's been a long time coming," he said.
