When Mark Hoefer joined Le Bilboquet Atlanta earlier this summer he was pleased to find a wine list that he considered to be strong and appropriate for the menu and cuisine of the restaurant.
"My task now is to find ways to elevate it and to fill out little gaps," said Hoefer, assistant manager and beverage director. It's exciting because It allows me to take my time, really dive in and to find things that are unique and that are powerful in their range."
